When you are a poor college student, there a a few staples that you truly live off of. For me, that was fruit, bread, boxed pasta, rice, and eggs. Obviously I ate more than that, but that’s really all you need, right? There has been a couple of posts on Yow Yow! where I have discussed in the past how Veronica and I have spent evenings making dinner together that were just “eggs-in-a-baskets.” Essentially, a cracked egg in the middle of a piece of bread. Dinner’s ready! It was a poor college girl’s go-to, but a fried egg can be so much more.
